Today’s social media hash tag of the day could be #BestDayEver…. Yesterday was Easter and I had the privilege of watching thousands gather together to celebrate in beautiful Brevard County Florida… Viera to be exact.

The phrase #BestDayEver brings a smile to my face every time I think about it …. my memory bank spins around oh so many #BestDayEver thoughts…. such as … …wedding day, birth of children, finishing a big goal, stepping out in faith…. how do I choose?

HOW DO You choose a #BestDayEver memory? For me…. above all else, I will never forget the day I realized that God, the creator of the Universe loved me and was personally wooing me into His loving hands.  I fell to the floor and wept…..

I’m so thankful I chose to reach up and say… Yes.  YES Lord…. I will follow you. Yesterday, not only I, but thousands witnessed many friends, family, neighbors and even complete strangers step into yet another personal #BestDayEver moment…. choosing to begin or renew their personal relationship with Jesus Christ.  The God made man, creator of the universe is still alive, joy filled and constantly growing in hearts… across the world… and for eternity to come. Wondering how myself and others have stepped into the #BestDayEver moment in time? I wondered too…. its really pretty simple.

  • Confess
    • confess that you’re a sinner (we all are…. we’re selfish, right?)
  • Believe
    • believe in Jesus Christ as your personal Lord and Savior, HE is the greatest gift to mankind ever given!
  • Become
    • walk away from your old life and walk into all that God’s created you for… there is a perfect plan… it’s a promise!

Coconut Flour Crepes

It’s Spring Break week here in Brevard County Florida…

The girls and I made a #HealthyMeetHappy test recipe today for dinner at the request of one of our children.

The handpicked menu included a family favorite “Brinner” also known as Breakfast at Dinner alongside a dietitian inspired test recipe for Coconut Flour Crepes that I’ve been wanting to try for a while now.

The Brinner Menu included the following:

Scrambled Eggs

Applewood Smoked Bacon

Fresh Watermelon Cubes

Fresh Mixed Greens Salad

and the test recipe Coconut Flour Crepes with a Strawberry & Honey Yogurt Creme



What was the family’s response you ask??  Our youngest giggled joyously ” this is the best dinner ever”!

Our middle child beamed with delight as she had successfully assisted in the kitchen and was now enjoying the fruits of her efforts…

Big Sister eagerly accepted the Coconut Flour Crepes and filled it with her own hand picked ingredients.  Not sure what to do with it, she kept it dry and tried eating it like a taco.  After a few bites, she decided it wasn’t for her and went back to her staple preference for Brinner.  The dietitian mom in me was proud of the kiddos for their willingness to try something new with zeal and excitement.  Another #HealthyMeetHappy success story for the blog posts…

Everyone enjoyed a delicious Brinner meal, another test recipe on the books ( not a personal favorite but) with a bit of recipe re-creation… may just become a family Winner?!
