All Things Beautiful

Do you like all things beautiful?

Me too…

Welcome to another day with #HealthyMeetHappy as we journey towards a beautiful life.

finding beauty in the simple things of life

What exactly does beautiful mean?  Good question…

Dictionary.com describes the word this way:

beautiful

adjective

1.

havingbeauty; possessing qualities that give great pleasure or satisfaction to see, hear, think about, etc.; delighting the senses or mind:

a beautiful dress; a beautiful speech.

2.

excellent of its kind:

a beautiful putt on the seventh hole; The chef served us a beautiful roast of beef.

3.

wonderful; very pleasing or satisfying.
noun

4.

the concept ofbeauty(usually preceded by the).

5.

(used with a plural verb) beautiful things or people collectively (usually preceded by the):

the good and the beautiful.

6.

the ideal ofbeauty(usually preceded by the):

to strive to attain the beautiful.
interjection

7.

wonderful; fantastic:

You got two front-row seats? Beautiful!

8.

extraordinary; incredible: used ironically:

Your car broke down in the middle of the freeway? Beautiful!
Beautiful:  What does beautiful mean to you?
a deep breath, a baby sleeping, the sun shining down on ripples of water?
Is it possible to slow down in a very fast paced world and find the beauty in things naturally created?

fresh carrots full of nutrients, fiber and phytochemicals

Look at the beautiful colors in the assortment of fresh carrots . . . deep purples, yellows, orange hues with lively green stems that so beautifully decorate the topsoil while nurturing the fine root vegetable underneath the ground. One can almost taste the Vitamin A, beta-carotenes and phytonutrients bursting at the intricately created seems.
  1. Is this beauty replaceable?
  2. Does a synthetic Vitamin A supplement exhibit beauty like this?….  Just something to think about …..
  • Can you smell and taste the earthiness of the carrot?
  • Can you hear the crunch of the complex starches, fibers and hydration plumping the cells of the vegetable.  Look at the unique lines and textures… isn’t it just picture perfect?
Wouldn’t you agree that these beautiful carrots are a perfect analogy of a #HealthyMeetHappy experience?
So…. what is beautiful to YOU?
How can you begin today to see beauty in the simple, finer things in life.
Let us not grow wearing in doing good, for at the proper season, we will reap a harvest if we do not give up.
Let’s make it another #HealthyMeetHappy day!

Farm to Kitchen Healthy Recipe Creation

As we wind down National Nutrition Month #NMM 2015,

Yemila and I continue to prepare for the

NNM Cooking Demo

  – RSVP on Facebook or

 Angela at angela.gallagher.rdn@gmail.com

  •  Hosted by Angela Gallagher, RDN, LDN with #HealthyMeetHappy at Vintage Living Marketplace
  •  North of Viera Blvd on US1 in Rockledge Florida  on Tuesday March 31st at 10:30am RSVP is recommended
  • This is a free event to the community of Brevard County, donations will be accepted to support the local Cocoa Food Bank and to cover energy costs for the kitchen.
  • Canned food donations will also be accepted and delivered to the Cocoa Food Bank

Today, we prepared a test recipe using a combination of local ingredients and pantry staples in the beautiful kitchen of Vintage Living Marketplace.  Feel free to check out their website at http://vintagelivingmarketplace.weebly.com/

One recipe turned out fabulous, another recipe a flop . . . but then, that’s just the nature of a test kitchen.  Some recipes work the first time out of the oven and some healthy recipes require some serious tweaking to make them reputable enough to share.  A good part of a Registered Dietitian’s baseline training is in the hands on, practical application of nutrition in the kitchen.  Test recipes, recipe modification, recipe analysis and menu breakdowns are all just a normal part of the routine…

Just as a science researcher documents, reports and analyzes their findings, a dietitian can help the community apply the sound science of nutrition to the real life application that we call life and cooking meals in a home kitchen.

We’d love to have you join us for our first annual NNM Cooking Demo, and given the overwhelming positive response…

Be sure to watch for future events with #HealthyMeetHappy as we teach that good nutrition and preventative healthcare begin in the kitchen.

  • What favorite recipe would YOU like to have modified to fit your #HealthyMeetHappy lifestyle?
  • Let’s make it another #HealthyMeetHappy week, friends!

Farm to Kitchen Series in Brevard County, Florida

Yemily and I set out on a journey of dabbling in food photography around Brevard County Florida last week…

We were also searching for local food ingredients for healthy recipes that we will be testing in our Farm to Kitchen Cooking Demos we are planning on hosting at Vintage Living Marketplace off of US1 in Rockledge.

Here are a few pictures from our findings.. the farm market we visited was in downtown Cocoa Village in the Myrt Tharp Square.  Many of the local artisans, produce wholesalers and farmers are all local to the county and set up a lovely display of goods every Wednesday in the village.

  • But first . . . in traditional #HealthyMeetHappy style . . . the day begins with…. YES, you guessed it.  Coffee!
  • The day begins with french pressed coffee on the back porch… brewed to perfection in just 3 minutes

mmmmm….

  • Locally grown herbs and flowers are shown here including the Stevia plant, basil, lavender, thyme, mint and florals.  Did you know that one can even grow fresh tumeric here in the south?

  • These are all locally sold fresh produce at the Cocoa Village Farmers Market in the courtyard of Cocoa Florida on Wednesdays
  • Most of the current produce is coming from Plant City Florida, an agricultural hub of the south

  • Feel free to check out the abundant fresh markets in the area like this one in historic Cocoa Village
  • Isn’t it time to get back to the basics of #HealthyMeetHappy living?

  • We were happy to have scored some great finds at our local farmers market.
  •  We are working on creating several  Healthy Recipes for disease management including diabetes, weight loss, GI tolerance and food sensitivities that we will be happy to share in the future.
  • Look for many great family friendly recipes to come!

2015-03-17 12.23.18-11

  • Shown above is locally harvested honey from Pappa’s – shown here is Orange Blossom with Comb; all natural, raw and unfiltered honey at its best.  Try it over a slice of toast with a cup of tea?

Wishing you a #HealthyMeetHappy week!

Looking for a Safe Place to Learn and Grow?

Are you or anyone you know new to the community?

Are you looking to connect with a safe group of friends?

If so, WELCOME and Hello!  We know how it feels to be searching for close relationships and a safe place to learn and grow.  Having moved to Florida’s Space Coast from the state of Michigan 17 years ago, my husband Chris & I bounced from place to place looking for somewhere to connect.

Almost 8 years ago we stepped into a newly planted satellite church in Viera called Calvary Chapel.  Our lives have never been the same since.  We’ve never walked another day alone ….

And I will ask the Father, and He will give you another Comforter (Counselor, Helper, Intercessor, Advocate, Strengthener, and Standby), that He may remain with you forever–o find somewhere to find meaning and personal relationships.

Maybe you’re like we were; new to the area, separated from family and wanting to create real personal relationships.  If so, feel free to stop by the Calvary Chapel Viera Campus ….. Chris & I would love to welcome you to the community.  We serve almost every Sunday at the 10:45 am service at New 2 Calvary welcome area.  We’ve found that there’s so many great ways to get connected at all stages of life!

You can also check out the church website at http://www.calvaryccm.com

Feel free to stop by & say hello!

Yet another way that we have found to live out #HealthyMeetHappy!
